Pumpkin Spice Latte

Homemade Pumpkin Spice Latte

I moved to FL 3 years ago away from the cold temperatures of the Ohio winters.  Love the Florida sunshine and the fact that we can drive to the beach in less than 2 hours.  However, this time of year there is a small portion of me that does miss the Fall weather which lead to the family traditions with my siblings of going to the Apple Orchards and going apple picking or going to the pumpkin patch with all the nieces and nephews.  You can do those things down here but just not the same effect in 80/90 degree weather.  One of my other favorite things about this time of year is Starbucks comes out with their Pumpkin Spice Latte- YUM.   One of my major weaknesses (actually Starbucks coffee in general).  I always try to order the "light" version- skim milk- no whip.  I just found this recipe for a homemade version of the Pumpkin Spice Latte (healthier version) so thought I would share.

This pumpkin spice latte has half the calories of your favorite fall treat.

Total Time: 10 min.
Prep Time: 5 min.
Cooking Time: 5 min.
Yield: 1 serving

Ingredients:
1 cup nonfat milk
1 Tbsp. pumpkin puree
¼ tsp. pumpkin pie spice
2 tsp. pure vanilla extract
1 cup brewed black coffee or 1 shot espresso
1 dash ground nutmeg (to taste; optional)

Preparation:
1. Heat milk, pumpkin puree, pumpkin pie spice, and extract in medium saucepan over medium heat; cook for 4 to 5 minutes, or until mixture is hot, but not boiling. It is ready when there are many small bubbles on the sides of the saucepan.
2. Remove from heat; mix vigorously with a whisk until frothy.
3. Pour coffee or espresso into serving mug; top with milk mEixture.
4. Top with nutmeg if desired.
